KUCHUMBUR SALAD

 


Kachumber

Tomato, Cucumber, and Onion Relish

Healthy, scrumptious with daal chawal,

Bhuna gosht, kbab 

  • Makes 2 cups (500 g)
  • ½ small red onion, diced and soaked in cold water for 5 minutes
  • 2 tomatoes, seeded and diced
  • 1 large cucumber, peeled, halved, seeded, and diced
  • ¼ cup (4 g) finely chopped mint leaves.
  • ½ bird’s eye chile, finely chopped
  • ½ teaspoon salt, or to taste
  • 2 tablespoons lemon juice

Drain the onion and place it in a medium bowl. Add the tomatoes,

cucumber, mint and chile, and mix well. Season with salt and

sprinkle with the lemon juice. Serve immediately.

✨✨موہلت ✨✨

ہم کراءے کے گھر میں گزشتہ تین سال سے رہ رہے ہیں اور اس گھر میں وقت گزارتے ہنستے کھیلتے ہمیں یہ اپنا  گھر لگنے لگا اور خبر ملی کہ یہ گھر ایک کروڑ میں بک گیاہم  سب پر جیسے سکتہ طاری ہو گیا...... ظاہر ہے مہلت ملی  تھی گھر سے منتقل ہونے کی تو سب نے نیا گھر تلاش کرنے کے لیے کمر کس لی............... مگررررررر
کہیں نہ  کہیں شدید دکھ سا دل میں بیٹھ رہا تھا اس صحن کو پھر کبھی نہیں دیکھ سکیں گے، اس کچن میں کوکنگ نہیں کر سکیں گے ،اور سب سے شدید دکھ یہ کہ ایک کارنر جس میں نماز پڑھتی تھی اس کارنر کو میں ہمیشہ مس کروں گی!!!! 
پھر اچانک ایک خیال آیا کہ کوءی بات نہیں درودیوار بدلیں گے گھر والے تو ہم ایک ساتھ رہیں گے.......... کچھ حوصلہ بلند ہوگیا 
پھر جب قدرت کے قانون پر غور کیا تو سمجھ آئی کے 
ہمارا جو جسم ہے مٹی کا ایک گھر ہے جسے ہماری روح کو مقررہ وقت پر خالی کرنے کا حکم دیا جاتا ہے یعنی ہماری موت س پہلے موہلت تو شاید دی جاتی ہے اسی لئے گھبراہٹ ور بیچینی گھیرنے رکھتی ہے لیکن حقیقی گھر ہمارا قبر ہی ہے اور حقیقی فیصلہ الله کا ہی ہوتا ہے الله پاک سب پر اپنا رحم اور کرم رکھے امین ثمّ آمین

خود کو کم تر سمجھنا ،کسی کے سامنے شرمانا  جھجھکنا احساس کمتری نہیں ،،بلکہ کسی کو ہر وقت نیچا دکھانے کی سوچنا، سامنے والا بےشک حق اور سچ پر ہو  اس انسان کا حق اور سچ پر ڈٹے رہنا   ،سے آپ کو مس؀لہ ہو اور آپ بلاوجہ اس انسان کی اکڑ توڑنے  کا سوچے بیٹھے ہوں تو سمجھ جایے کہ آپ احساس کمتری کا شکار ہیں 
اور؀انسان  پھر خود کا نقصان کرتا؀ہے..

THE BEAR THAT HUGGED THE TEA KETTLE.

A bear once came out of the woods late in autumn,

to have one more walk before he should go to sleep for the

winter.

A little farmhouse stood near the woods, and the boiling

tea-kettle had been set out of doors on a little table by the

woodshed.

The bear saw the steam puffing from the spout of the

kettle, and perhaps had never seen such a sight before ; for

he hurried up to the table, and standing on his hind legs,

put his nose into the hot steam to smell it. Of course his nose was burned, and he was angry with the tea-kettle,

and jumping on the table he seized it in his hairy paws ;

but he dropped it very quickly and spilled some of the hot

water on his feet. The little children who were looking

out of the window at him were very glad to see him run away as fast as he could, and their mamma assured them

the bear would not be likely to visit their house again

that winter.

  •  ½ cup coca butter          
  • ½ cup coconut oil 
  • ½ cup Shea butter
  •  1 tsp. vitamin E oil 
  • ½ cup sweet almond oil 
  • 2-4 drops of peppermint essential oils
🇩‌🇮‌🇷‌🇪‌🇨‌🇹‌🇮‌🇴‌🇳‌

Bring the cocoa butter, the coconut oil, and the Shea butter together in a medium-sized pot. Place the pot over low heat and stir slowly.

Allow the mixture to assimilate and melt completely. Afterwards, remove it from heat.

 Next, add your sweet almond oil, vitamin E, and 2-4 drops of peppermint essential oils. Remember: each drop is strong, but you can enhance the smell as much as you like!

 Stir the mixture well and allow it to chill in your refrigerator for two hours. The mixture should begin to firm.

 Afterwards, take the mixture out of the refrigerator and utilize a stand mixer or hand mixer. Mix until the “batter” is whipped-looking, like whipped cream.

 Place the newly-prepared whipped body butter in a glass, sealable jar or container and store it in a cool, dry location. If you’ve utilized all the incredible, organic ingredients listed above, your body butter should last up to twelve months for long-lasting, luxurious effects.

TOPPING

  • 1 cup [120 g] almonds, toasted and chopped
  • ½ cup [100 g] coarse or fine sugar
  • MUFFINS
  • 2 cups [284 g] all-purpose flour
  • ½ cup [50 g] almond flour
  • 3 tablespoons poppy seeds
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ¼ teaspoon baking soda
  • 1 cup [200 g] granulated sugar
  • ¾ cup [180 g] buttermilk, at room temperature
  • 5 tablespoons [70 g] unsalted butter, melted
  • ⅓ cup [75 g] vegetable or canola oil
  • ¼ cup [60 g] sour cream
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ teaspoon almond extract
  • ½ cup [100 g] Almond Cream.

  • Preparation Method
  • Position an oven rack in the middle of the oven and preheat the
  • oven to 375°F [190°C]. Grease a standard twelve-cup muffin tin (see
  • Muffin Tins and Greasing the Pans, 
         FOR THE TOPPING 
  • In a small bowl, combine the toasted almonds and sugar.
            FOR THE
            MUFFINS

  •  In a large bowl or mixer bowl, whisk together the all-purpose
  • flour, almond flour, poppy seeds, baking powder, salt, and baking soda. Make a well in the center
  • In a large bowl or liquid measuring cup, whisk together the granulated sugar, buttermilk, melted butter, oil, sour cream, eggs,vanilla, and almond extract until completely combined. 
  • Pour the wet ingredients into the well in the dry ingredients and mix gently until almost combined, being careful not to overwork the batter.
  • It should not be completely smooth; there should be some visible lumps andbumps. Dollop the almond cream over the top of the batter, then use a spatula to swirl it into the batter with two or three turns until just incorporated; there will still be streaks of cream. The muffin batter can be stored, covered, in the refrigerator for up to 24 hours before baking. Scoop a scant ⅓ cup of the batter into each muffin cup.

  • The batter should fill the cups and mound slightly in each cavity 
  • (using a scoop helps the tops mound). Top each muffin with a generous amount of the almond-and-sugar mixture. Bake until the muffins are light golden brown and a toothpick inserted into the center of a muffin comes out with a few crumbs, rotating the pan halfway through baking, 18 to 23 minutes. 
  • Let the muffins cool in the tin for about 5 minutes, then gently remove them and transfer to a wire rack to cool to room temperature. Muffins are best eaten the day they are made, but they can be stored in an airtight container in the refrigerator for up to 2 days.
        NOTE
  • If you do not have almond cream on hand, you can swirl in ⅓cup [100 g] of lemon curd or your favorite jam.

 Total Prep Time: 1 hour and 10 minutes

 Ingredients:

  • ¼ pint of yogurt
  •  2 ounces of ground almonds
  •  1 ½ tsp Of powdered chili 
  • ¼ tsp of crushed bay leaves 
  • ¼ tsp of ground cloves
  •  ¼ tsp of ground cinnamon
  •  1 tsp of garam masala
  •  4 pods of green cardamom 
  • 1 tsp  of ginger pulp
  •  1 tsp of garlic pulp 
  • 1, 14 ounce can of tomatoes, 
  • Salt to taste
  • 2 pounds of chicken, skinless and cut into small cubes 
  • 3 ounces of butter 
  • 1 Tbsp of corn oil 
  • 2 onions, thinly sliced 
  • 2 Tbsp. of coriander, chopped 
  • 4 Tbsp. of heavy whipping cream.
Directions:

1. In a bowl, add in the yogurt, ground almonds, crushed bay leaves, powdered chili, ground cloves, powdered cinnamon, garam masala, pods of green cardamom, ginger pulp, and garlic pulp. Stir well until evenly mixed

2. Add in the chicken and toss well to coat. Set aside for later use.

3. In a skillet set over medium to high heat, add in the butter and corn oil.

Add in the thinly sliced onions. Cook for 5 minutes or until soft.

4. Add in the chicken mix Cook for 10 minutes or until the chicken is cooked.

5. Add in half of the coriander and stir well to mix.

6. Add in the heavy whipping cream and stir gently to incorporate. Allow to come to a boil.

7. Remove from heat and garnish with the chopped coriander over the top.
