SHORTBREAD

 


Short bread

Buttery, rich shortbread is always a comforting winner, and it’s a great Recipe to introduce children to baking. This shortbread recipe uses the“rubbing in” method, where children can get their hands in and feel thei ngredients.You can always make this recipe up a level if you want to make it extra special. You could add chocolate chips, nuts, dried fruit, or even fudge pieces to the breadcrumb stage.

Serving Size: 12

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup / 7 oz butter, unsalted and fridge cold
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • Cold water to mix.
Instructions:

  • Preheat your oven (350 degrees F) and line a large baking tray.
  • Cut butter into tiny cubes. Put the flour and butter in a bowl, and using fingertips, rub the butter cubes in. Keep going until the mixture looks like breadcrumbs and there are no lumps.
  • Stir in the sugar and vanilla and enough water to make the mix into a firm dough. Wrap in cling film. Chill for 2 hours.
  • Roll the dough out to 1” thickness. Cut 12 fingers from the dough and lay them on the baking tray. Bake for 25-30 minutes, until cooked and just a little colored.
